In a large bowl, combine the chopped chicken, shredded cheese, mashed potatoes, onion, parsley, salt, pepper, and garlic powder. Mix until well combined.
Shape the mixture into small, oval-shaped patties, about 2 inches long.
Beat the eggs in a shallow dish. Place the breadcrumbs in another shallow dish.
Dip each patty into the beaten eggs, then roll in breadcrumbs to coat evenly.
Heat oil in a large skillet over medium heat. Fry the croquettes in batches, turning occasionally, until they are golden brown and crispy on all sides, about 4-5 minutes per batch.
Remove the croquettes from the skillet and drain on paper towels.
Serve warm, garnished with additional chopped parsley if desired.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or chopped jalapeños to the mixture. You can also experiment with different cheeses, such as pepper jack for a bit of heat or gouda for a smoky flavor. If you prefer baking over frying, place the croquettes on a greased baking sheet and bake at 400°F (200°C) for about 20 minutes, flipping halfway through, until golden and crispy.
