1. Make the Donut Dough:
In a bowl, combine warm milk, yeast, and a pinch of sugar. Let sit 5β10 minutes until foamy.
Add sugar, eggs, softened butter, flour, and salt. Mix and knead until smooth (about 5β8 minutes).
Cover and let rise in a warm place for 1β1.5 hours, until doubled in size.
2. Prepare Filling (while dough rises):
Beat cream cheese until smooth.
Mix in powdered sugar and vanilla extract.
Fold in diced strawberries and optional graham cracker crumbs.
Chill mixture in the fridge for at least 30 minutes to firm up.
3. Shape and Fry Donuts:
Roll out dough to ~Β½ inch thickness. Cut into rounds using a donut cutter or glass (~3-inch).
Place on a floured tray, cover, and let rise for another 30 minutes.
Heat oil in a deep fryer or pot to 350Β°F (175Β°C). Fry donuts 1β2 minutes per side until golden brown. Drain on paper towels.
4. Fill the Donuts:
Once slightly cooled, use a piping bag with a round tip to inject the cheesecake filling into each donut (poke a small hole in the side).
Dust with powdered sugar or drizzle with strawberry glaze.

Make it easier: Use store-bought plain donuts and just make the filling.
Extra fancy: Dip donuts in white chocolate or strawberry glaze and sprinkle with crushed graham crackers.
Want baked? Bake shaped donuts at 375Β°F (190Β°C) for 8β10 minutes, then fill.
