Honey Onion Tart

1. Caramelize the Onions (Takes 30–35 minutes)
Heat olive oil and butter in a large skillet over medium-low heat.

Add the sliced onions, salt, pepper, and thyme.

Cook slowly, stirring occasionally, for about 25–30 minutes, until golden and jammy.

Stir in balsamic vinegar and honey, and cook another 3–5 minutes.

Taste and adjust honey/salt as needed. Set aside to cool slightly.

2. Prepare Puff Pastry
Preheat oven to 400Β°F (200Β°C).

Roll out the puff pastry on a lightly floured surface into a rectangle (about 10x14 inches).

Place on a parchment-lined baking sheet.

Score a Β½-inch border around the edge with a knife (don’t cut all the way through).

Brush the border with the beaten egg.

3. Assemble the Tart
Spread the caramelized onion mixture evenly inside the scored border.

(Optional) Crumble goat cheese or feta on top for extra tang.

4. Bake
Bake for 20–25 minutes, until the pastry is golden and puffed.

5. Serve
Let cool slightly.

Drizzle with a bit more honey, sprinkle with sea salt, and top with arugula or microgreens if desired.

Slice and serve warm or at room temperature.
