Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9-inch (23 cm) round cake pan or line with parchment paper.

Cream the butter and sugar together in a bowl until light and fluffy (about 2โ€“3 minutes).

Add eggs, one at a time, beating well after each addition. Stir in vanilla extract (or lemon zest).

Combine flour and baking powder in a separate bowl. Gradually add to the wet mixture, alternating with milk. Mix until smooth but donโ€™t overmix.

Pour the batter into your prepared cake pan. Smooth the top with a spatula.

Bake for 30โ€“35 minutes, or until a toothpick inserted into the center comes out clean.

Cool in the pan for 10 minutes, then transfer to a wire rack.

Dust with powdered sugar or add your favorite topping. Serve slightly warm or at room temperature with a hot cup of tea.
