Mexican Tortilla Casserole

Instructions

1. Prepare the Pan
Spray a springform pan, round cake pan, or casserole dish with cooking spray.

2. Cook the Meat
Brown the ground beef and diced onion together in a skillet. Drain excess grease.
Add the taco seasoning and cook according to the package instructions.

3. Assemble the Casserole Layers

First layer:

Place 1 tortilla at the bottom of the baking dish

Spread 1/3 of the refried beans

Top with 1/3 of the seasoned meat

Sprinkle with shredded cheese

Second layer:

Add a tortilla

Layer 1/2 of the rice, 1/2 of the salsa, 1/2 of the corn

Sprinkle with cheese

Third layer:

Add a tortilla

Spread 1/3 of the beans

Add 1/3 of the meat

Sprinkle with cheese

Fourth layer:

Add a tortilla

Use remaining beans, meat, corn, rice, salsa

Finish with shredded cheese

4. Bake
Cover with foil and bake at 350°F (175°C) for 40 minutes.
Uncover and bake an additional 10–15 minutes.
Let sit for 5 minutes before cutting.

5. Serve (Optional Toppings):
Top with sour cream, diced onions, and shredded lettuce if desired.
