Poached Salmon with Lemongrass and Coconut

Ingredients:
* 3 tablespoons coconut oil, divided
* 1 (1-inch) piece fresh ginger, peeled and grated
* 1 large shallot, chopped
* 1 lemongrass stalk, finely chopped or crushed
* 1 (12-ounce) can coconut milk, well shaken
* 1 whole star anise
* A large pinch of crushed Aleppo or red pepper flakes, plus more for garnish
* 1/2 teaspoon kosher salt
* 4 (5-ounce) salmon fillets
* 1/2 cup chopped spinach or kale
* 3 garlic cloves, finely chopped
* 1 lime, zested and quartered
* Sea salt, to serve (optional)
* 1/4 cup roughly chopped fresh basil
* 1/4 cup roughly chopped fresh mint
