Simply blanch the spinach briefly in salted water, drain, and squeeze dry. Mix the spinach, feta, and honey, and season. Then carefully unfold the pastry sheets and cut each in half lengthwise. Divide the resulting pastry strips into thirds (makes 24 pastry strips).
Brush a little butter on one piece of pastry. Then spread a little filling on one long side, fold in the sides, and roll up from the long side. Then brush a little butter on a second piece of pastry. Place the rolled-up, filled pastry diagonally on top, roll up, and place on a baking sheet lined with parchment paper.
Repeat with the remaining dough pieces. Brush the rolls with the remaining butter. Bake for 10 minutes in the center of an oven preheated to 220°C. Remove from the oven and let cool on a wire rack.
