1. Wash the red cabbage and cut into thin strips. Peel, core, and dice the apples. Finely chop the onion.
2. Melt the butter in a large saucepan over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
3. Add the shredded red cabbage and diced apples to the pan. Sprinkle with the sugar and stir well.
4. Add apple cider vinegar, water, salt, pepper, cinnamon, cloves, and the bay leaf. Mix well and bring to a boil. Reduce heat and simmer, covered, for about 45-60 minutes, until the red cabbage is tender, stirring occasionally.
5. Remove the bay leaf and cloves before serving. Serve the red cabbage warm.
