Place the pork leg in a large ziplock bag or dish.
Pour the marinade over the pork, ensuring it's fully coated.
Seal and refrigerate for at least 4 hours, preferably overnight. Turn occasionally to marinate evenly.
Roast the Pork:
Preheat oven to 325Β°F (160Β°C).
Place pork on a roasting rack in a pan. Pour a bit of water or broth into the bottom (keeps it moist).
Roast uncovered for 2.5 to 3.5 hours, depending on size, until internal temp reaches 145Β°F (63Β°C).
Optional: Baste occasionally with pan juices or leftover marinade (boil it first if raw).
Crisp the Skin (Optional):
For crackling: Increase oven to 450Β°F (230Β°C) for the last 15 minutes or broil for a crispy finish.
Keep an eye on it so it doesnβt burn.
Rest & Serve:
Let rest 15β20 minutes before slicing to retain juices.
