Season the Rice:
While the rice is still warm, mix in the rice vinegar, sugar, and salt. Let it cool to room temperature.
Prepare Toppings:
Cut fish, avocado, and veggies into small, thin pieces (about the size of a coin for topping each ball).
Assemble the Sushi Balls:
Lay a piece of plastic wrap flat.
Place a slice of topping (e.g., salmon, avocado) in the center.
Add about 1 tablespoon of rice on top.
Wrap and twist the plastic wrap tightly to form a smooth ball, pressing gently.
Unwrap and place on a plate. Repeat with different toppings.
Garnish & Serve:
Sprinkle with sesame seeds or drizzle with a tiny bit of soy sauce.
Serve with soy sauce, wasabi, and pickled ginger on the side.
