Bavarian cream, or Bavarois, is already a classic dessert due to its light and velvety texture. When combined with the vibrant and slightly tart flavor of cherry, it becomes a true “sweet dream” – elegant, refreshing and incredibly delicious. It’s an impressive dessert, but it’s not overly difficult to make!
Here is a recipe for a mouthwatering Cherry Bavarian Cream:
Ingredients:
For the Cherry Puree:
400g fresh or frozen cherries (pitted)
1/4 to 1/2 cup (50g-100g) granulated sugar (adjust to your taste and sweetness of the cherries)
1 tablespoon fresh lemon juice
For the Bavarian Cream:
3 large egg yolks
1/2 cup (100g) granulated sugar (for the yolks)
1 cup (240ml) whole milk
1 teaspoon vanilla extract
2 teaspoons unflavored gelatin powder (approximately 7g)
1/4 cup (60ml) cold water (for the gelatin)
1.5 cups (360ml) heavy whipping cream (35% fat, well blended) (cold)
For Garnish (Optional):
Fresh Cherries
Mint Leaves
White Chocolate Shavings
