Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
Mix wet ingredients: In another bowl, whisk together milk, oil, eggs, and vanilla.
Combine: Pour the wet mixture into the dry ingredients. Stir just until combined (do not overmix—a few lumps are fine).
Add mix-ins: Gently fold in any optional ingredients like fruit or chocolate.
Fill muffin cups: Divide the batter evenly among the muffin cups (about ¾ full).
Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
