Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat.
Add the shredded pork to the skillet and cook until warmed through, about 5 minutes.
Stir in the salsa and cook for another 2 minutes.
Reduce the heat to low and add the shredded cheddar cheese, stirring until melted and well combined.
Arrange the large tortilla chips in a circle on a baking sheet to form a bowl shape.
Spoon the pork and cheese mixture into the center of the tortilla chip bowl.
Sprinkle the diced green onions or chives on top.
Bake in the preheated oven for 10-12 minutes, or until the tortilla chips are golden and crispy.
Carefully transfer the tortilla chip bowl to a serving platter and enjoy!
