Instructions
Preheat & Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Cook the Beef & Veggies
In a large skillet over medium heat, cook the ground beef, breaking it apart with a spoon, until browned. Drain excess grease.
Add diced onion and red pepper. Cook for 3–4 more minutes until softened.
Add Seasoning & Simmer
Stir in the taco seasoning and ½ cup of water or broth. Reduce heat to low and let simmer for 5–6 minutes until thickened.
Mix in Remaining Ingredients
Remove from heat. Stir in the drained tomatoes and green chiles, sour cream, and black beans. Mix until combined.
Assemble the Casserole
Lightly crush 1 cup of Doritos and spread over the bottom of the baking dish.
Spoon half of the meat mixture on top.
Add another layer of crushed Doritos and half of the cheese.
Spoon on the rest of the meat mixture.
Finish with remaining crushed Doritos and cheese.
Bake
Bake uncovered for 25–30 minutes, until bubbling at the edges and the cheese is melted and golden.
Serve
Serve hot. Top with sour cream, salsa, green onions, or hot sauce if desired.
Serving Suggestion
This dish pairs well with a side salad, Mexican rice, or guacamole.
