π Ingredients (Serves 4):
For the Zucchini Boats:
4 medium zucchinis
1 tbsp olive oil
Salt & pepper (to taste)
For the Filling:
1 tbsp olive oil or butter
8 oz mushrooms, finely chopped
3 cups fresh spinach (or 1Β½ cups frozen, thawed and drained)
2 cloves garlic, minced
1 cup ricotta cheese
ΒΌ cup grated Parmesan cheese
ΒΌ tsp nutmeg (optional, but great with spinach/ricotta)
Salt & pepper to taste
Β½ cup shredded mozzarella (for topping)
