This easy-to-make dish combines the best elements of raclette in a portable, flaky crust that's perfect for sharing or enjoying as an indulgent meal. Ingredients
For the Crust
1 sheet frozen puff pastry (thawed according to package instructions)
1 egg, beaten (for egg wash)
For the Filling
2 medium potatoes, thinly sliced (use a mandoline for even slices)
1 cup grated raclette cheese (or a mix of Gruyère and fontina)
½ cup diced ham or prosciutto
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
Salt and freshly ground black pepper, to taste
Optional Toppings
Cornichons (tiny pickles), halved
Chopped chives or parsley, for garnish
Instructions
Step 1: Preheat and Prep
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Thinly slice the potatoes and grate the raclette cheese. Set aside.
Step 2: Sauté the Garlic
Heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant but not browned. Remove from heat and let it cool slightly.
Step 3: Assemble the Tarticlette
Roll out the puff pastry sheet on a lightly floured surface if needed to make it slightly larger and easier to work with.
Spread the cooled garlic oil evenly over the puff pastry, leaving about ½-inch border around the edges.
Arrange the potato slices in an overlapping pattern over the garlic oil, covering most of the surface.
Sprinkle half of the grated raclette cheese over the potatoes.
Scatter the diced ham or prosciutto evenly across the cheese layer.
