In a large bowl, combine the cabbage, carrot, red onion, jalapeño, and cilantro.
In a separate small bowl, whisk together the mayo, lime juice, vinegar, cumin, salt, pepper, and honey (if using).
Pour the dressing over the vegetables and toss well until everything is evenly coated.
Chill for at least 15–30 minutes to let the flavors meld.
Serve cold as a side dish or as a topping for tacos, burritos, or grilled meats.
