Preheat oven to 375°F (190°C).
In a large bowl, combine the ground meat, grated zucchini, onion, garlic, egg, breadcrumbs, Parmesan, and seasonings. Mix well but don’t overwork it.
On parchment paper or foil, flatten the meat mixture into a rectangle (about 1 inch thick).
Place cheese sticks in a line across the center of the meat.
Carefully roll the meatloaf around the cheese to enclose it in the center. Seal the edges.
Transfer to a baking dish or lined tray. Brush with the glaze, if using.
Bake for 45–55 minutes, or until cooked through and golden.
Let it rest for 10 minutes before slicing to allow the cheese to stay inside.
