Heat olive oil in a skillet over medium heat.
Crack one egg into each piece of bazlama bread, making a small well in the center. Sprinkle with salt and pepper.
Add mozzarella and feta cheese on top of the egg, then fold the edges of the bread around the egg, creating a pocket.
Cook in the skillet for 3-4 minutes on each side, until the egg is cooked through and the bread is golden and crispy.
Garnish with fresh parsley, if desired, and serve warm. Enjoy!
