A healthy, cold and refreshing summer salad 🍋 🟩🍊, delicious, economical, easy and quick to prepare

Peel or leave skin on the cucumber (your choice), slice thinly or dice.

Cut avocado into cubes. Finely slice red onion if using.

Make the dressing:

In a small bowl, whisk together lemon juice, zest, olive oil, honey (if using), salt, and pepper.

Toss everything together:

Combine cucumber, avocado, red onion, and mint in a bowl.

Pour over the dressing and gently toss to coat.

Chill & serve:

Refrigerate for 10–15 minutes if you want it extra cold, or serve immediately.

Garnish with extra mint leaves or lemon slices.

💡 Tips:
Use lime and cilantro for a more tropical/Mexican twist.

Great served alongside grilled fish, chicken, or falafel.

Turn it into a meal by adding quinoa, chickpeas, or cold pasta.
