Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the Meat Mixture: In a large bowl, combine the ground beef, crumbled bacon, shredded mozzarella, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
Form the Bombs: Take a small portion of the meat mixture (about 1–2 tablespoons) and roll it into a ball. Press a bit more mozzarella cheese into the center of the ball, then encase the cheese with the beef mixture. Roll it into a smooth ball. Repeat with the remaining mixture.
Wrap with Bacon: Take 1-2 slices of bacon and wrap each meatball tightly, securing the ends underneath the bomb. Optionally, you can sprinkle breadcrumbs on top for an added crunch.
Bake: Place the bacon-wrapped meatballs on the prepared baking sheet. Bake for 20-25 minutes, or until the bacon is crispy and the beef is cooked through (internal temperature should reach 160°F or 71°C).
Serve: Let the mozzarella bacon bombs rest for a few minutes before serving. These are perfect as an appetizer or a party snack!
