2 cups dry chickpeas (or 3 cups canned, drained and rinsed)
1 onion, finely chopped
2β3 garlic cloves, minced
1/4 cup olive oil
Juice of 2 lemons
1 tsp dried oregano
1β2 bay leaves
Salt & freshly ground black pepper, to taste
Water or vegetable broth (6β8 cups)
Optional: chopped fresh parsley or dill for garnish
