Cut & prep: Cut each cinnamon roll into quarters.
Make batter: In a bowl, whisk eggs, milk, cinnamon, and vanilla.
Dip & cook: Dip cinnamon roll pieces into the egg mixture. Cook on a greased skillet over medium heat until golden brown on all sides, about 2–3 minutes per side.
Serve: Drizzle with included icing and serve with maple syrup if desired.
