Ingredients (for 1 roll / approx. 8 pieces):
4 eggs
100 g sugar
1 sachet vanilla sugar
100 g flour
1 tsp baking powder
1 pinch of salt
300 ml heavy cream
1 sachet cream stabilizer
1 can peaches (drained weight approx. 250 g) or fresh
Optional: powdered sugar for dusting
Preparation:
Preheat oven to 200°C (top/bottom heat).
Beat eggs with sugar and vanilla sugar until frothy.
Mix flour with baking powder and salt and carefully fold in.
Spread the dough onto a baking sheet lined with parchment paper and bake for approx. 10 minutes.
Turn the dough out onto a sugared kitchen towel, peel off the parchment paper, roll it up, and let it cool.
Cut the peaches into small pieces. Whip the cream with the cream stabilizer until stiff peaks form.
Carefully unroll the Swiss roll, spread with cream, and arrange peach slices on top.
Unroll again, refrigerate, and dust with powdered sugar before serving.
