Potsticker Soup with Mushrooms and Bok Choy

Ingredients:
1 tbsp sesame oil (or neutral oil like canola)

3 cloves garlic, minced

1 tbsp ginger, minced

1 small onion, thinly sliced

6 oz mushrooms, sliced (shiitake, cremini, or button)

4 cups low-sodium chicken or vegetable broth

2 cups water

2 tbsp soy sauce (or to taste)

1 tbsp rice vinegar

1 tsp chili garlic sauce or sriracha (optional, for heat)

12–16 frozen potstickers or dumplings (pork, chicken, veggie—your choice)

2 baby bok choy, halved or chopped

2 green onions, sliced

Toasted sesame seeds (optional, for garnish)

Instructions:
Sauté aromatics:

Heat sesame oil in a large pot over medium heat.

Add garlic, ginger, and onion. Sauté 2–3 minutes until fragrant and slightly softened.
