Instructions:
Prepare the Salmon:
Season the salmon fillets with salt, pepper, and thyme.
Sear the Salmon:
Heat olive oil in a skillet over medium-high heat.
Sear the salmon fillets for 3-4 minutes per side, or until cooked through. Remove from heat and set aside.
Sauté the Mushrooms:
In the same skillet, add the sliced mushrooms and cook until they release their moisture and start to brown.
Add the minced garlic and cook for another minute.
Add Spinach:
Add the fresh spinach leaves to the skillet and cook until wilted.
Make the Creamy Sauce:
Pour in the heavy cream and bring to a simmer.
Stir in the grated Parmesan cheese until melted and smooth.
Season with salt and pepper to taste.
Serve:
Place the cooked salmon fillets on top of the spinach and mushroom mixture.
Drizzle the creamy sauce over the salmon.
