Salad "Tropical Island"

Ingredients (serves 4):
1 small pineapple (or 1 can of pineapple chunks, drained)

1 ripe mango

1 bell pepper (yellow or red), thinly sliced

1 avocado, diced

1 small red onion, finely chopped

1 handful of arugula or lamb's lettuce

100g shrimp (optional, cooked and peeled)

2 tbsp desiccated coconut (toasted)

Fresh cilantro or mint (to taste)

For the dressing:
3 tbsp lime juice (or lemon juice)

2 tbsp olive oil or coconut oil

1 tsp honey or agave syrup

1 tsp soy sauce

Salt and pepper to taste

A pinch of chili (fresh or dried, optional)
