Prepare the fruit: Peel and core the pineapple and mango, and cut into bite-sized pieces. Dice the avocado and immediately drizzle with a little lime juice to prevent it from browning.
Chop the vegetables: Thinly slice the bell pepper and finely chop the onion.
Mix everything: In a large bowl, combine the prepared ingredients with the washed lettuce. Add shrimp, if desired.
Mix the dressing: Mix all the dressing ingredients well and pour over the salad. Mix gently.
Serve: Garnish with toasted coconut flakes and fresh herbs.
🍍 Tip:
You can also add pomegranate seeds or cashews to give the salad even more crunch and fruitiness. For a vegan version, simply omit the shrimp.
