2. Make the Cake Batter
In a saucepan, combine butter, water, and cocoa powder. Bring to a boil, stirring until smooth. Remove from heat.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
Stir the cocoa mixture into the dry ingredients.
Add sour cream, eggs, and vanilla, mixing until smooth.
3. Bake
Spoon batter into mini muffin cups, filling about ¾ full.
Bake for 10–12 minutes, or until a toothpick comes out clean.
Let them cool slightly in the pan before removing.
4. Make the Icing
In a saucepan, melt butter. Stir in cocoa powder and milk. Bring to a simmer, then remove from heat.
Add vanilla and gradually whisk in powdered sugar until smooth and pourable.
Mix in pecans if using.
5. Glaze the Bites
While cake bites are still slightly warm, spoon icing over each one. The icing should spread and slightly soak in.
📝 Tips
For even more chocolate flavor, sprinkle mini chocolate chips on top before the icing sets.
Let the icing set at room temp or refrigerate briefly to firm up.
